A delicious bowl of steaming Easy Cauliflower Soup! Yum! I love soup. You can freeze it and defrost it whenever you need a quick meal. For lunch or dinner, either way, it is magnificent! The potato and cauliflower make this soup creamy without using actual cream. It is just the best!

Ingredients
- 1 tbsp Vegetable Oil
- 125 g Yellow Onion
- 8 g Fresh Garlic
- 1 L Water
- 30 g Powdered Vegetable Broth - [See good to know section.]
- 150 g Potatoes
- 400 g Cauliflower
- 1 Dried Bay Leaves
Other things you need
- Food Scale
- Stove
- Frying Pan
- Cutting Board
- Cutting Knife
- Stockpot
- Immersion Blender - [See good to know section.]
Instructions
- Weigh your ingredients.
- Put the frying pan on the stove over medium heat.
- Chop up the garlic and onion. Make sure the pieces are all roughly the same size.
- Once the pan is warm, add the oil.
- Add the chopped garlic and onion to the pan. Fry the onion and garlic for about 5 minutes while stirring regularly. They are done when they are golden brown.
- Peel the potatoes and chop them into large pieces.
- Clean the cauliflower and chop it into large pieces.
- Put the soup pan on the stove over medium to high heat and add all the ingredients and put the lid on the pan. Bring the content to a simmer. This will take about 10 minutes, depending on how much soup you are making.
- Let the soup simmer for 40 minutes.
- Let the soup cool down.
- Once cooled down, remove the bay leave and use the immersion blender to puree the soup until it is completely smooth. [See good to know section.]
- Heat the soup up again and enjoy your Easy Cauliflower Soup!
Good to know
- Storing: Make sure to store your soup in an airtight container in your refrigerator or in the freezer if you are not eating all of it right away.
- Shelf life: The soup will stay fresh for several days if stored correctly in the refrigerator. When stored in the freezer, the soup will stay fresh for several months.
- Tip: The soup will taste best when you make it one day in advance.
- Organic: To make this recipe organic, only use organic ingredients.
- Vegan: Make sure you use vegan broth.
- Working with vegetables: Always make sure you wash fresh vegetables before you use them.
- Tip: If you do not have an immersion blender, you can also put the soup in a regular blender. Just turn on the blender till the soup is smooth.
- Tip: This may seem obvious but always make sure you use a soup pan that can easily hold the amount of soup you are making.

Both when buying food or when making your own, it is important to inform yourself about the nutritional value. Have a look at the nutrition label, learn about your serving size and what nutrients this product will bring to the table.
If you want to compare different products and their values, it is easier to look at a label where the values are given per 100 grams. This way you get a better understanding of the categories certain products belong to when it comes to nutritional values. Is this a product with a high sugar content? Does it contain a lot of fibre? How does this product measure up if I am looking to stick to a low-sodium diet?
Keep in mind that if you are looking to eat healthily, you should not just avoid eating fat and/or sugar. We need both in our daily diet. Make sure however to be aware of where you get your lipids and sugars from. As a rule of thumb, you could say; variation is very important in your diet and in general, the closer your food is to come straight from the source, the better.
